Food of Late

Food dishes I've been busy with lately.

Apples are in abundance this year so I
made apple pie filling for the freezer.

This is my first try at Impossible Pie.

in texture, taste and color.

Tacos x2!

I made Beef Tacos for Lunch yesterday.
They consisted of beef, tomato, lettuce and cheese
in a crunchy taco shell.

I had Chicken Tacos (and fries) for Dinner

yesterday at a local restaurant.

They consisted of lettuce, cheese, chicken

and sweet chipotle sauce.

Guess which one I enjoyed more?

Lemon Burst Cookies

I quickly whipped up a batch of these deliciously
moist lemon cookies to serve our company last night.

They went over really well!

Today I Baked:

Red Velvet Cupcakes

Ginger Snap Cookies 

"Melt-in-Your-Mouth" Barbeque Beef

I had never made this before but since it was so tender and delicious

I will make it again!

Shredding the beef after it was roasted.

I made the BBQ sauce and put it along with the shredded beef in my

slow cooker to blend the flavours.
